How to make Gluten Free Pumpkin Chocolate Chip Cookies!

INGREDIENTS

  • 2.5 cups Bob’s Red Mill Bob’s Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 tsp pumpkin spice
  • 1/8 tsp salt
  • 2 packets stevia
  • 2 eggs
  • 2 tsp vanilla
  • 1/4 cup coconut oil
  • 1/2 cup pumpkin puree
  • 3/4 cup maple syrup
  • 1/2 cup mini chocolate chips (dairy free or regular)

INSTRUCTIONS

  1. Preheat oven to 375 degrees.

  2. Mix the dry ingredients together and set aside.

  3. Mix the liquid ingredients together and combine with the dry ingredients.

  4. Add in the chocolate chips.

  5. Roll the dough into 30 small rounds, then place each one on an oiled cookie sheet and flatten. 

  6. Bake for about 30-40 minutes (or until desired texture is achieved).

  7. Serve and enjoy!
