Healthy Avocado Egg Salad

INGREDIENTS

  • 8 hard boiled eggs
  • 2 avocados pit and skin removed
  • 1 1/2 tbsp lemon juice
  • 1/3 cup Onion chopped
  • ½ tsp kosher salt
  • Black pepper to taste
  • Bread for serving

INSTRUCTIONS

  1. Add all ingredients to a bowl and mash and stir to combine.
  2. Serve on bread or open faced-on toast.
