CHEESY BACON FAT HEAD BISCUITS (LOW CARB AND GLUTEN FREE)

INGREDIENTS

  • 8 ounces Applegate Turkey Bacon
  • 4 cups shredded mozzarella cheese
  • 4 ounces cream cheese
  • 1/2 cup 53grams coconut flour (I used Bob’s Red Mill)
  • 1 tsp Italian seasonings
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 4 eggs

INSTRUCTIONS

  1. Preheat oven to 400 degrees.
  2. Cook bacon until crisp then chop and set aside.
  3. In a microwavable bowl add the mozzarella and cream cheese.
  4. Microwave 2 minutes then stir until smooth.
  5. In a small bowl whisk together coconut flour and dry seasonings.
  6. Beat eggs and add to coconut flour mixture. Stir to combine.
  7. Stir this mixture into the cheese mixture until all incorporated.
  8. Stir in half the chopped bacon and set aside half for topping the biscuits.
  9. Make 12 biscuits or 24 mini biscuits.
  10. Sprinkle more bacon onto each biscuit.
  11. Bake 20 minutes until golden brown.
  12. Allow to cool 5-10 minutes before removing and enjoying!
