Total Choice Spinach Stuffed Chicken
- 4 oz chicken
- 1/2 cup fresh spinach
- 3 tbsp grated parmesan cheese
- 1 clove garlic, minced
- 1 tsp extra virgin olive oil
- 1 oz pine nuts
- In a small bowl, combine spinach, cheese, garlic, oil and pine nuts.
- Cut a 2-inch pocket in the thickest part of the chicken breast.
- Place mixture in pocket and bake at 350 F until chicken is no longer pink and stuffing is hot, about 20 to 25 minutes.
